Thai Caesar Salad


Thai Caesar Salad


Ingredients:
1 clove garlic. Sliced and pan-fried in oil until nicely browned,
About 1 minute
1 teaspoon minced garlic
1 tablespoon fish sauce
1 ½ cups good quality mayonnaise
2 teaspoons red wine vinegar
Zest of 1 lime
Juice of ½ lime
1 teaspoon sugar
1 teaspoon freshly cracked black pepper
2 Kaffir lime leaves, cut into thin slivers and then chopped
1 large head romaine lettuce, washed, dried, cut into bite-size pieces, and refrigerated
½ cup freshly grated or shaved good-quality parmesan cheese
2 cups ready-made croutons

Directions:
Place the pan-fried and minced garlic, fish sauce, mayonnaise, vinegar, lemon zest, lemon juice, sugar, and black pepper in a food processor. Blend until smooth and creamy, about 1 minute. Stir in the chopped lime leaves and refrigerate dressing until use.
To serve, toss the romaine with the dressing until well coated. Sprinkle on the cheese and croutons and gently toss. Serve immediately.
